Healthy Banana Bread (Paleo Friendly)

Personally, I struggle finding things to eat for breakfast. In the morning I just don't feel like the typical breakfast foods (eggs, yogurt, oatmeal, toast, etc.), but I know if I don't eat anything I will feel sick, not to mention everyone knows it's important to "break the fast". So I started thinking of ways I could get over this breakfast "slump" and I thought banana bread was such a nice, fun and filling breakfast treat that will not only motivate me to eat but give me lot's of energy for the day!

I created this yummy healthy banana bread recipe for you to try out too, whether it's to get over the breakfast "slump" or afternoon cravings "slump". This banana bread satisfies your gurgling stomach and your sweet tooth!

Get creative:

Add raisins, cacao, choc chips, etc.

Go for your life!

I get pretty creative in the kitchen and start adding things to my base recipes so I have put 'optional' next to the ingredients that aren't really required. I added Maca Flour as it is such an amazing super food that adds energy to your day along with so many other amazing benefits! By adding this I did find I needed to add a bit of nut milk (almond) to the mixture.

It's important to use your judgement when you add your own little additions (raisins, nuts, milk etc.). See if the consistency is right for you: Too wet? Add more dry ingredients! Too dry? Add more wet ingredients!

I also like to add stevia on top of the coconut sugar as I like my banana bread pretty sweet! However, stevia isn't necessary and can add more cost to the recipe. You are more then welcome to swap coconut sugar for stevia as well.

½ Cup of Almond Flour

½ Cup of Coconut Flour

4 Ripe Bananas

2 Eggs

2 Teaspoons of Chia Seeds (Soaked in 5 Teaspoons of water)

½ Cup of Coconut Oil, melted

1 Tablespoon of Coconut Sugar

½ Cup of Maple Syrup

1 Teaspoon of Vanilla Extract

1 Teaspoon of Baking Soda

2 Teaspoons of Cinnamon

2 Teaspoons of Stevia (Optional)

1/3 Cup of Maca Flour (Optional)

½ Cup of Chopped Walnuts (Optional)

1) Set oven temperature to 180*C and grease/line a loaf pan

2) Mix all ingredients together in a large bowl with a wooden spoon

3) Pour mixture into the prepared loaf pan

4) Bake for around 25min (Until knife comes out clean when inserted)

5) Let it cool in the loaf pan before removing

6) Store in pantry, fridge or freezer!

Voila! A healthy banana bead recipe that will either get you up in the morning or finish your day. Personally, I love to toast mine in the mornings with a sandwich press, especially in winter (Sometimes I add a bit of peanut butter on it too if I am feeling it).

That is the beauty of food, you can get as creative and wild as you want!

Let me know some of your breakfast recipes and how you go trying this one out. I'd love to hear from you!

Love always,

Ashlyn Ann
