Healthy Muffin Recipe - Vegan/Paleo

I understand how hard it can be finding that perfect recipe that satisfies your sweet tooth while also not leaving you feeling guilty after it. That is why I want to share this amazing muffin recipe I use when baking for friends, family or myself!  It is a much loved, yummy for all recipe you MUST try!

I made my muffins Paleo but the best part about this recipe is that it is so flexible; You can swap some of the ingredients out to make it Vegan as well! (E.g. Swap the egg for a flaxseed egg)

This is quite a creative recipe as it is in two parts: The base ingredients/recipe for the batter and then the ingredients for the flavours I added to this base recipe - But the flavour part is all up to you and what you want to create/add!



3 Ripe Bananas

3 Tbsp Coconut Oil, Melted

1 Egg (Or a Flaxseed Egg)

1 Tbsp Rice Malt Syrup/Honey (I used both)

2 Tbsp Soaked Chia Seeds (Put seeds in a bowl with water and refrigerate until gooey)

1 Tsp Cinnamon

1 Tsp Vanilla

½ Tsp Sea Salt

1 Tsp Baking Powder (I used Bi-Carb Soda which works the same way)

¼ Cup – ½ Cup Coconut Sugar (Depending on how sweet you want it)

1 Cup Almond Meal

1 ½ Cup Buckwheat Flour

1/3 Cup Tapioca Flour



1) Mash the bananas up until they are nice and… mushy! 

2) Add all ingredients except the flours and give it a good stir.

3) Once that’s all mixed together, now it’s time to add the Almond Meal, Buckwheat Flour and Tapioca Flour.

4) Lastly, mix all ingredients together!


Now that you have your batter as a base, it is time to get creative and make your own flavours. For example, I divided my mixture into two bowls and made a chocolate batch and a salted caramel batch. Below are the ingredients I used to mix in with my base recipe!


Half (or Full) block of Loving Earth Chocolate – Mylk Flavour (Crushed up)

1/3 Cup Dark choc chips

½ Cup Cacao

1 Tbsp Honey/Agave Syrup

1 Tbsp Stevia (To make it that little bit sweeter)

Coconut Milk (Add however much is needed to make the consistency of the batter a bit softer)


Salted Caramel

Half (or Full) block of Loving Earth Chocolate – Salted Caramel Flavour (Crushed up)

1 Tbsp Cinnamon Pinch of Salt

1 Tbsp Honey/Agave Syrup

1 Tbsp Stevia Diced Dates (Add how much you want to meet your desired sweetness levels)

Coconut Milk (Again, add however much is needed to make the consistency of the batter a bit softer)

Now that you have added your flavourings:

1) Place mixture into prepared muffin trays.

2) Put into pre-heated oven at 180*C (360*F).

3) Try wait patiently for about 30 min until they are golden (test with a knife/fork, if it comes out clean it is ready).

4) Cool the muffins before serving.



There you have it: A quick, simple muffin recipe that won't have you feeling guilty after eating them!
